Yellow Squash Boats; sail away to squash heaven. Or something like that. It has squash, cheese, crackers, and onions, a great combination for a great side dish. And it is pretty simple too. Carve your boats, mix your filling, toss it all together in the oven, and you have a healthy and delicious side dish in around half an hour.


  • 4-6 yellow squashes
  • 1 small onion diced
  • 4-6 crushed crackers (I used Ritz)
  • 1 tablespoon of butter
  • 1/4-1/2 cup of cheese


  1. Boil some water in a large pot and toss the squash in for 7-10 minutes. Pre-heat the oven to around 350 degrees while they boil.
  2. Take the squash out, let it dry off and cool down.
  3. Once cooled slice in half (long ways) and gently scoop out the inside and place in a bowl.
  4. Heat up a medium sized pan on the stove with medium/high heat. Drop in the butter and onions and cook until the onions soften.
  5. While you do this put the squash shells on a pan and bake for 5-7 minutes to slightly harden the shells.
  6. Mix in the squash and crackers and cook for 1 minute, then take the pan off of the burner.
  7. Scoop out the fillings back in to the shells, Slap some cheese on top (enough to cover the fillings) and place back in the oven for 15-20 minutes.
  8. Enjoy.
