Pan Seared Filet Mignon

A favorite of mine. Start off with a quality filet cut. Season with salt, pepper and garlic. Heat a cast iron skillet on high using 2 tablespoons of olive oil. Sear each side of the meat for 1 minute. Remove from heat and place skillet in a heated oven 400* Bake for 5-6 minutesĀ . Remove from oven and let stand for 5 min. Serve with a baked potato. Enjoy.

Simply Roasted Garlic Chicken

Every time I hear roasted chicken, I think of Costco's chicken in its plastic shell. The other day my wife tells me, "Lets have roasted chicken this week". Without giving it much thought I told her I would pick one up from Costco before she gets home from work. Immediately, she says "Noooo, I want it homemade!!!" I began thinking how much of a pain in the ass this was going be, we didn't even have a roasting pan.
