Yellow Squash Boat

Yellow Squash Boats; sail away to squash heaven. Or something like that. It has squash, cheese, crackers, and onions, a great combination for a great side dish. And it is pretty simple too. Carve your boats, mix your filling, toss it all together in the oven, and you have a healthy and delicious side dish in around half an hour.

Beef Tamales

What happens when you leave two guys at home with nothing to do? Let's hope nothing dangerous! In my case, we made Beef Tamales. Let me rephrase that, a shit load of Beef Tamales. Not including the shopping we did the day before, my friend Shahay and I spent 15 consecutive hours in the kitchen making these delicious Beef Tamales. I do admit that between the cooking times we played a few games of Modern Warfare 2, so it wasn't all work and no fun. Best of all I had the opportunity to prove to my wife, who doubted my ability, that even a noob like myself can make awesome Beef Tamales. I knew it was sweet victory when she ate her words after taking her first bite and admitting the Tamales rocked.

Beer Battered Fries

The first time I had Beer Battered Fries, was at a bar/restaurant in Huntington Beach, CA. After an interview in Irvine, I met up with my friend Set and Gary for lunch. Set took us to this place for the sole purpose of trying their Beer Battered Fries. I still remember this day like it was yesterday. In fact this was in July of 2001, exactly 9 years ago. With a little help from Google I found the restaurant and sure enough they still have Beer Battered Fries on the menu, the place is called Huntington Beach Beer Company. Now I can't remember how the food was, but I can say that I don't see Beer Battered Fries on menus very often. This Beer Battered Fries Recipe isn't the same as the one they have at HB Beer Company but it is good. Choosing the type of beer you use in your batter makes this recipe personal to each individual. Healthy Chili

This is by far my favorite chili recipe. In its original form it calls for beef, but add a nice amount of ground turkey and you will never know the difference. And it will make it a bit more healthy. Besides that the veggies in this recipe are plentiful and delicious. Its almost a feel good chili. So when its time for that Sunday football party you can pig out on chili, and not feel too bad about it. My tip on this one..... don't be a wimp with the chili powder, give it a little spice!
